<p><strong><em>Ingredients:<br />
</em></strong></p>
<ul>
<li><strong>1 (16-oz) Italian or sourdough bread loaf</strong></li>
<li><strong>2 1/2 tbs butter, divided</strong></li>
<li><strong>1 small onion chopped</strong></li>
<li><strong>1/2 (8-oz) package sliced fresh mushrooms</strong></li>
<li><strong>1 large egg</strong></li>
<li><strong>6 to 7 tbs ketchup, divided</strong></li>
<li><strong>1 1/2 cups (6 oz) shredded Cheddar cheese, divided</strong></li>
<li><strong>1 lb lean ground beef</strong></li>
<li><strong>1/2 cup dry red wine or beef broth</strong></li>
<li><strong>1 tsp garlic salt</strong></li>
<li><strong>1/4 tsp dried thyme</strong></li>
<li><strong>2 to 3 tbs mayo</strong></li>
</ul>
<div>Preheat the oven to 350ºF and lightly grease a rack that is in a roasting pan.</div>

<div>Cut bread loaf in half lengthwise.  Scoop out soft innards, leaving 1/4-inch-thick shells.  Tear reserved bread into small pieces, and measure 1 1/2 cups crumbs, reserving remaining bread pieces for another use.  Set bread shells and 1 1/2 cups breadcrumbs aside.</div>

<div>Melt 1 1/2 tbs butter in a large skillet over medium heat; add chopped onion and mushrooms, and sauté 8 minutes or until tender.</div>

<div>Stir together egg and 2 tbs ketchup in a large bowl.  Add onion mixture, 1 1/2 cups breadcrumbs, 1/2 cup cheese, beef, and next 3 ingredients, mixing well.  Shape mixture into a loaf slightly smaller than bread shell.  Place on rack in roasting pan and bake for 1 hour, or until done.</div>

<div>Spread bottom shell with mayo; top with meat loaf.  Top with remaining ketchup and sprinkle with remaining cheese.  Top with bread half.  Melt remaining 1 tbs butter and brush evenly over bread.  Wrap in aluminum foil and bake for 10 to 15 minutes or until heated.  Serve warm.</div>

<p><strong>3.</strong> Pre-heat a skillet over medium-high heat. Add the vegetable oil and then cook the onion, celery, and garlic until tender, but not browned &#8211; 5-6 minutes. Transfer the vegetables to the bowl with the oats and milk.</p>
<p><strong>4.</strong> Add the ground turkey, mushrooms, thyme, eggs, parsley, Worcesterhsire sauce, salt and pepper to the mixing bowl and mix everything together with your hands. Transfer the mix to a meatloaf pan or baking sheet. If you like a meatloaf with soft sides, leave the mix in the loaf pan, ideally one with a perforated bottom and a pan underneath to catch the drippings. If you prefer a harder crust on the sides of your meatloaf, invert the loaf pan onto a baking sheet and bake the meatloaf without the loaf pan.</p>
<p><strong>5.</strong> Bake in the oven for 60-75 minutes, or until an instant read thermometer registers 160 F in the center of the meat. Let the meatloaf rest.</p>
<p><strong>6.</strong> While the meatloaf is resting, heat a skillet over medium-high heat. Add the olive oil and cook the sliced mushrooms until tender. Season with salt and pepper and serve the sliced meatloaf with the sauteed mushrooms over the top.</p>

<p><strong>1 (9.5 ounce) box frozen five-cheese Texas toast</strong><br />
<strong>1 (8 ounce) box frozen onion rings</strong><br />
<strong>6 (1 inch thick) cold meat loaf slices</strong><br />
<strong>1/2 cup barbeque sauce</strong><br />
<strong>1 cup prepared coleslaw</strong></p>
<p>&nbsp;</p>
<p>Cook Texas toast and onion rings according to package directions.</p>
<p>Spray a large non-stick skillet with cooking spray, and heat over medium-high heat.</p>
<p>Add meat loaf slices; cook 5 minutes. Turn, brush evenly with barbeque sauce, and cook 5 more minutes or until thoroughly heated.</p>
<p>Top each slice of toast evenly with meat loaf slices, coleslaw, and onion rings. Serve sandwiches immediately.</p>

<p><strong><em>Ingredients</em></strong></p>
<ul>
<li><strong>8 slices of white bread, torn into small pieces</strong></li>
<li><strong>1/4 cup milk</strong></li>
<li><strong>1 (4-oz) package blue cheese, crumbled</strong></li>
<li><strong>1 large egg, lightly beaten</strong></li>
<li><strong>1 lb lean ground beef</strong></li>
<li><strong>1/2 lb ground pork</strong></li>
<li><strong>2 cups soft breadcrumbs </strong><em>(about 5 slices of white bread)</em></li>
<li><strong>1/2 cup chopped onion</strong></li>
<li><strong>2 tsp salt</strong></li>
<li><strong>1/8 tsp pepper</strong></li>
<li><strong>3 Tbs fresh parsley, chopped </strong><em>(and extra for garnish, if desired)</em></li>
<li><strong>3 Tbs ketchup</strong></li>
<li><strong>1 Tbs Worcestershire sauce</strong></li>
<li><strong>2 large eggs, lightly beaten</strong></li>
</ul>
<div>Preheat oven to 375ºF and lightly grease rack in broiler pan.</div>
<div>Combine bread, milk, cheese, and egg; set aside.</div>
<div>Combine beef and next 9 ingredients.  Shape into a 15- x 12-inch rectangle on heavy-duty plastic wrap.  Spread blue cheese mixture on top, leaving a 1-inch margin around edges.  Starting at the short side and using plastic wrap to lift,  roll up jellyroll fashion.  Press edges and ends to seal.  Place, seam-side down, on rack in broiler pan.  Bake for 1 hour.  Garnish, if desired, and serve warm.</div>
